Do your kids have a sweet tooth? This is the perfect breakfast for a Saturday morning to kick start the weekend. It is the perfect combination of sweet and healthy.

Always feel free to substitute other fruit for the strawberries and enjoy!


  • 1 egg

  • 1 cup flour

  • ½ teaspoon baking soda

  • ¾ cup Vanilla Silk Almond Creamer or regular milk

  • 1 teaspoon baking powder

  • ½ cup maple syrup

  • 2 tablespoons vegetable oil

  • ½ cup cut strawberries

  • 2 teaspoons vanilla extract


  • In a medium bowl, add in all the dry ingredients and mix well.

  • In a small bowl, add in all the wet ingredients and stir with a whisk.

  • Pour the wet ingredients (excluding the vanilla extract and syrup) in with the dry ingredients gradually and whisk all together. Try not to over mix.

  • On the griddle or stove top, heat up the pan with a little butter on the pan or you can use an alternative oil.

  • Using a ¼ measuring cup, pour the mixture on the pan. Wait until bubbles appear on the top and flip. All together each cake should take approximately 2 minutes.

  • Heat up maple syrup on simmer in a small pot and mix in the vanilla extract.

  • Top with diced strawberries and syrup and enjoy.
