STRAWBERRY VANILLA PANCAKES
Do your kids have a sweet tooth? This is the perfect breakfast for a Saturday morning to kick start the weekend. It is the perfect combination of sweet and healthy.
Always feel free to substitute other fruit for the strawberries and enjoy!
1 cup flour
½ teaspoon baking soda
¾ cup Vanilla Silk Almond Creamer or regular milk
1 teaspoon baking powder
½ cup maple syrup
2 tablespoons vegetable oil
½ cup cut strawberries
2 teaspoons vanilla extract
In a medium bowl, add in all the dry ingredients and mix well.
In a small bowl, add in all the wet ingredients and stir with a whisk.
Pour the wet ingredients (excluding the vanilla extract and syrup) in with the dry ingredients gradually and whisk all together. Try not to over mix.
On the griddle or stove top, heat up the pan with a little butter on the pan or you can use an alternative oil.
Using a ¼ measuring cup, pour the mixture on the pan. Wait until bubbles appear on the top and flip. All together each cake should take approximately 2 minutes.
Heat up maple syrup on simmer in a small pot and mix in the vanilla extract.
Top with diced strawberries and syrup and enjoy.
