Irish Dirt Cakes
Making St. Patrick’s Day treats with kids is a delightful way to celebrate the holiday while bonding and fostering creativity. Ingredients
2 rows mint oreos
Large box vanilla pudding
green & blue food dye
8 oz cream cheese
1/4 c sugar
1 TBL vanilla
1/2 tsp peppermint extract
1/2 pint heavy whipping cream
Directions
Place cookies in large ziploc bag and crush with a rolling pin, set aside.
Make pudding according to box, but omit 1/2 c milk. Add six drops of green food dye and three blue to achieve a mint green color.
Allow pudding to set.
In a large mixing bowl, beat cream cheese, sugar and both extracts until smooth.
Slowly add chilled heavy whipping cream until thick peaks form.
In clear glasses or bowls, layer the cookies, pudding and whipped cream two or three times. Sprinkle remaining cookie crumbs on top.
